How To Make Nigerian Dish Of Swallow Or Rice

Ingredients
Oha leaves, cocoyam, assorted meats (beef, goat meat, tripe), stock fish, dry fish, palm oil, ground crayfish, pepper soup spice, onion, salt and pepper to taste
Recipe
• Boil the assorted meats and stock fish together with the grated cocoyam in a pot until they are tender. Add salt to taste.
• In a separate pot, heat the palm oil until it becomes clear. Add the chopped onions and sauté until they become translucent.
• Add the ground crayfish and pepper soup spice to the sautéed onions, stirring continuously to 
blend the flavours.
• Pour in the stock from the boiled meats and cocoyam into the pot with the sautéed ingredients. 
Allow the mixture to simmer for about 10 minutes, allowing the flavours to meld.
• Add the dry fish to the pot and continue simmering until it is well incorporated into the broth.
• Finally, add the finely chopped Oha leaves to the pot, gently stirring to avoid crushing the leaves. Let the soup simmer for an additional 5 minutes until the Oha leaves are tender but still vibrant green.
• Adjust seasoning to taste, and your Native Oha Soup is ready to be served.
