 FRUIT CAKE

INGREDIENTS 
FLOUR-450g
COCO POWDER-50g
BROWN SUGAR-400g
BUTTER-500g
EGGS-12Pcs
BRANDY-4Tbsp
RUM-4Tbsp
MIXED FRUITS-300g(pre-soaked in brandy)
CINNAMON-1Tsp
MIXED SPICE-1Tsp
NUT MEG-1Tsp
BROWNING-2Tbsp
VANILLA FLAVOUR-2Tbsp
BAKING POWDER-1Tbsp
LEMON RIND-1Tbsp
CHERRIES-50g

PROCEDURE
·       Beat butter and sugar in a mixer till soft and fluffy
·       Break eggs into a bowl and beat slightly
·       Gradually add into the mixture, beat thoroughly after each addition
·       Gently add in all other wet ingredients and beat thoroughly
·       Sieve all dry ingredients together in a dry bowl
·       Gently and gradually fold dry ingredients into the mixture
·       Pour in the pre-soaked fruits, cherries and lemon rind
·       Gently mix till all ingredients are well mixed
·       Pour into a line pan and bake for about an hour or more till baked
