Eid Kabir: How To Make A Special Party Jollof Rice

Party Jollof Rice
Tomatoes Mixture:
* 4 Roma tomatoes,
* 3 Red bell pepper,
* 2 sweet pepper,
* 1 medium-sized red onion,
* 4 hot pepper.
For the Rice:
* 2 Cooking Spoon of vegetable oil
* 1 Medium-size onion
* 70g Tomato Paste( Tin Tomato)
* 1 Tablespoon Curry Powder
* 1 Tablespoon Thyme
* 2 Bay Leaves
* Jollof Seasoning
* 2 kg Rice
* 100g Butter
* Maggi cube
Salt to Taste.
Method:
Blend 4 Roma tomatoes, 3 Red bell pepper,
2 sweet pepper, 1 medium-sized red onion and hot pepper according to your taste.
( You can either toast in an oven for about 30 minutes.
Then blend all together or blend it flesh).
Add 2 Cooking Spoon of vegetable oil into a pot,
(You can use any oil of choice), it is optional.
Add 1 Medium-size onion and fry till translucent.
Add Tomato paste( Tin tomato),
Leave to fry for about 3-5 minutes,
Add the blended tomatoes mixture.
Add 1 Tablespoon Curry Powder,
1 tablespoon thyme, 2 bay leaves, Salt to taste, mix very well,
cover and let it to cook on a medium heat.
Add 1 Tablespoon of Jollof seasoning mix very well.
Add the washed Rice and 100g of butter.
(I will be using basmati Rice, you can use any rice of your choice) mix very well.
Add the Chicken stuck
Mix well again and add Maggi cube.
Cover and cook three quarters of the way on a medium heat.
(Open and add ½ medium-sized chopped onion
It’s optional), stir together,
Then cover with foil paper, (the foil paper makes the Rice to soft & Nice)
Cook on low heat till tender.
So Guys, Our Delicious Smoky Party Jollof Rice is ready
